Truly any apple you have on hand will do fine. I did a random mix of gala and winesaps, because that's what I had. I would only avoid soft apples like Macintosh.

Yes, it was quite delicious. I divide the recipe in half, and that works out so well. Now, I can’t stop thinking what other things I can do with this recipe; pumpkin, perhaps? Berries? I think you mentioned there are endless possibilities. I love to bake and I cherish your recipes; adoring every presentation, your writings and magical photography. The recipe came together super easily, and the house smelled divine while baking. The cake has appealing texture and nice subtle flavors despite the full tsps. each of cinnamon and nutmeg. I'm thinking about making it again with some homemade apple butter. But whatever changes I make I know it will become a new favorite breakfast for me- the hubby will require a drizzle of maple syrup (or a scoop of ice cream!) for him to like it as well. I usually open it in the web browser instead of substack, usually when it arrives as an email. Then, I can print it out. Can’t print from substack either

Really like your recipes—Joyce Vance’s blog alerted me to yours. But you know when you’re feeling shame or guilt about sugar, neither maple syrup nor honey are virtuous, yes? They’re both, essentially, sugar. Can’t wait to try this one though.
I work at my county's food bank and Trader Joes is so generous with giving us boxes and boxes of food ready to expire. The Maple Streusel Bread was in a couple weeks ago and it was everything I could do to not just rip one right open.
Absolutely fabulous. Made it today. Too bad can’t post a photo here. Moist and delicious and so satisfying!
I veganized the recipe by replacing the eggs with a banana and ground flax seed:
Place plant milk (amount indicated in recipe), one mid sized ripe banana, cut in chunks and 4 tablespoons ground flax seed in a high powered blender and blend on “high” for one minute. Add to recipe as directed.
I omitted the Apple sauce since I didn’t have any, but the whole banana made up for it.
Next, I’m going to replace the apples with frozen mixed berries!!!

Happened to me, too. Baked it for 40 min at 350F and it was perfect.
