Hiya! You could opt for a 1/2 cup of lime or lemon juice and lots of zest. Or, you can use 1 cup of mango puree along with 2 tablespoons or so of lime juice and some zest. You can make your own mango puree with frozen mango chunks. Just thaw a bag of mango chunks in the fridge. When defrosted, puree in a blender, then push through a sieve (like I describe with the passion fruit) and go for it. Any leftover puree can be used as a sauce for the pie. Hey, now I want to try this!
Where I live (Northern California) the supermarkets have small frozen cubes of passion fruit available (the brand is Pitaya Foods). Perfect to throw a few on a bowl of plain yoghurt. No seeds, all the flavor, my lips pucker in remembrance.
I live in Maine and passion fruit is a distant dream. I did see them once while visiting Chicago, but have no idea what a healthy ripe one looks like! I have looked for frozen and canned but no luck, even at Whole Foods. . So how would I recognize a good fruit? ( i did have a passion fruit mai tai once. That alone is worth finding them! ) My grocery manager is going to try to find some…..
