And reasonably nutritious. Well, reasonable for a chocolate chip cookie. How I'm prepping for this week's House January 6 commmission hearings and how my mom prepared me for all this.

Looks wonderful but have no oat flour. Can I either make it in processor or substitute almond flour for it? I’m with you on the hearings, changed an appt so I can watch.
"The Levain-like cookies were meant to be baked along with guests on my podcast..." I'm glad you didn't end up baking your guests. Sounds like something Republicans would do.
Oooooo wonderful and I think I can sub them low carb and gluten free. Thinking half buckwheat half TJ gluten-free for the whole wheat. Mix of Lakanto (golden) and allulose for the sweetner. It never gets as chewy but that's ok. Love oat flour, thanks for the intro way back in rona time!

Yes, you can process the oats in the processor until fine, or add more almond flour!
Love that you changed an appointment!
Thanks! Will make these tomorrow, bake Tuesday AM.
This is my absolutely favorite dinner-for-eight recipe I have ever read, Marissa!

Thank you! These sound fabulous. It's too hot to bake here right now (southern Arizona, no A/C) but I will be making these on the first cool day!
