Having difficulty celebrating this 250th anniversary. Feeling more determined than ever to continue the fight. And to make the ultimate chocolate chip cookie! πŸͺ TY πŸ‡ΊπŸ‡Έ

Hope you survived the 4th ok!

You two are so much fun and I always learn something that makes me smile all day. In all this horror, Substack as been one of the American things I can celebrate to have come my way. Even though, for example I knew of Jen Rubin, appreciated her thinking and writing at WaPo, it so much better to see her talking "in person" on my screen. Hear her laugh, tell joke, interview with such skill. Same can be said of you and Ayelet (and of course Norm Eisen Katie Phang, Jim Acosta, Adam Klasfeld, Tim Synder, Heather Cox Richardson, Robert Reich, Andrew Weissmann) In addition to getting schooled in making a really good chocolate cookie today, thanks to you I listened to Adam Klasfeld read Justice Jackson's opinion on Birth Right Citizenship and I urge everyone to to do that. I will be sharing both my (your) cookies and his recording at my neighborhood picnic today. Somehow, in all this mess, seeing, learning, laughing with you and Aylet it feels like together we are finding our way through what it means to be glad again. Thank you for all the heavy lifting you do online to make this happen.

Your words mean so much to me. Thank you. How was the neighborhood picnic? Is it like a block party?

Without referencing a particular chocolate chip cookie recipe, the ingredients that epitomize my ideal recipe includes salted French butter which makes the cookie flavor brim with buttery flavor, and dark chocolate chips or chunks with 70 - 80% cocoa. A slightly chewy cookie is also my ideal but some crunch also good.

Marissa Rothkopf's avatar

salted French butter and good chocolate make everything better.

We are NOT celebrating because the pedophile is still in the WH. I will be making these cookies to honor something which is cooking. I want to turn my flag upside down and fly it that way, but my husband is a federal worker and there are spies everywhere looking for those who are insufficiently "loyal". Thank you, Marissa, for saying exactly what most of us are feeling and reminding us there are things we can do to feel better about this awful, despicable, orange hideous human being we have in OUR house.

Misty's avatar

Now turning your flag upside down is MAGA. Remember Alito & wife did it last year? When Trump was "elected" in 2016, I flew my magnetic flag upside down on the back of my car. Then when Biden was in office, the MAGAs co-opted it.

Marissa Rothkopf's avatar

Well said...It's always wise to remind ourselves that the White House is OUR house. (And thank you for your thoughtful words!)

Your book is fabulous. Hard to get past Chocolate Chip Cookie Brittle. Your S’mores Bars (divine) were part of our friends barbecue and celebration today, along with a reading from the Declaration of Independence, Langston Hughes poem Let America Be America Again, Noel Paul Stookey’s America the Beautiful with verses for today, and a group sing of This Land is Your Land. We all felt up-lifted. Will β€œtest” the new recipe soon. Thank you !

Marissa Rothkopf's avatar

Thank you! And we read the Langston Hughes poem here on the July 4, too. Love that your gathering featured all those uplifting reminders of what America was/can be again. LMK your thoughts on the recipe.

Looks heavenly but SO much prep and work and time. I’m more of an impulse baker.

Marissa Rothkopf's avatar

You can always bake off a few after making them. There is no law that says you have to wait! LOL.

Neal Stiffelman's avatar

I appreciate that.

Oh, I can’t WAIT to try out this new recipe!! Thank you for your ingenuity and your generosity!

Marissa Rothkopf's avatar

Thank you for your kind words!!

What’s happening now is -every day - a test of the waters of resistance. They poke at us to see if they have sufficiently frightened us into freezing, rather than resisting. If we do, we have lost our republic. Now he’s trying to say If you’re a Democrat, you’re a Communist. (No, he is more the communist.) He’s a mob boss who has grifted his way into the highest office in the land. This has sullied and cheapened the office, not elevated the mob boss. We the People have to keep calling out the criminality, and find ways to burst his bubble by laughing at his failings. Obviously, in order to create a more perfect union, we have to keep seeing the things we need to fix and stop deluding ourselves that it’s going to pass with the next election.

And, Marisa and Ayelet, more chocolate chip cookies to fortify our efforts, is a most patriotic act! Keep baking America!

Wise words!!!

Thanks for listening and for being you!

So what did I do wrong? The malted milk powder caramelised into a single lump of toffee that simply would not mix with the butter. In the end I waited until it cooled and snipped it into little pieces with scissors. The dough is a couple of hours into the chilling and I am hoping for the best, but is there a trick to getting the powder incorporated into the butter better?

Marissa Rothkopf's avatar

Oh dear. I'm very sorry to hear that. I've not heard that from any of my testers, but when I was testing the recipe initially, I would whisk the malted milk powder into the browned butter while it was still on the stove and over the heat, and while I never had it ball up into one, it did clump into little pieces, which is why I then started testing it the way the recipe is now: to whisk in the malted milk powder after the browned butter has been poured into the mixture to cool. Let me look into the science a little more to try and figure out what happened. It sounds like what happens right before sugar turns to liquid caramel. Does your malted milk powder have sugar in it? It looks like your in the UK. Well, with a name like "wenlock house." ps: I think it was you who suggested the gin drink on the live with Kate McDermott...and I had it moments after the call was over and it was perfect. thank you.

Stephen Bowden's avatar

I am in the UK. I used Horlicks which is 41% wheat/malted wheat and 31% malted barley plus some whey powder and a small amount of added sugar. And yes, I suggested the passion fruit gimlet. I’m glad you enjoyed it.

These cookies look divine. The only thing I will change is I will substitute for the milk chocolate. I’m more of dark chocolate fan.

Judge Jackson was a classmate of my older daughter. My daughter feels so badly for her because she’s brillant and she’s stuck on this court with these awful conservatives. Hopefully there will be an end to this nightmare before I gain a million pounds eating ccc’s!

Marissa Rothkopf's avatar

Subbing dark choc for the milk is what I do sometimes. I feel badly for Judge Jackson, too. Hopefully she'll outlive them all and be able to shape the court back into its original idea... (Hard not to snack on cccs all day....)

I just made your lemon white chocolate chip muffins this afternoon.

Marissa Rothkopf's avatar

Oh those are delicious. I have a cookie version with similar flavors. I hope you enjoyed them.

These CCCs as you call them, look delicious! I will give it a go. They may help my politically created depression.

Marissa Rothkopf's avatar

That politically-created depression is a real thing. Let's look out for each other!
