I’m on my way to the deli to get lox & CC on an everything bagel for Linner (lunch&dinner). And I’m going to adopt your FAB casserole for a gluten free friend by either using Idaho potatoes or gnocchi instead of macaroni. LOVE food history. Being a NY/Jersey girl meant summers w Jersey tomatoes on a hard roll or Italian bread from the local bakery w Italian dressing - some kind of oil & vinegar w basil, oregano and/or parsley.
When in New York, I am sure to make a pilgrimage to Russ & Daughters, for true lox on a bagel with, of course, cream cheese. When I'm baking, I'm a big fan of cream cheese frosting instead of plain butter and powdered sugar frostings—the cream cheese cuts the overly sweet powdered sugar.
There must be something in the air or the phase of the moon or whatever because the past week has been a dumpster fire of crappola here too. This history of cream cheese reads like a balm though and it's greatly appreciated. And the recipe! Be still my heart- it's so nostalgic. Ideal comfort food to smooth over the ragged edges of the last week. Or two. Heavy sigh.

I love a smoked salmon dip that goes well with Ruffles potato chips, something like the one that Barefoot Contessa makes.
