I love the unusual process in this one, next up on my list! Have been experimenting with corn starch as well (way too many variations of shortbread!). I remember and old Alton Brown episode where he made losts of choco-chip cookies with different texture and naturally explained the science of it all., great show. I had mentioned in a past comment that I use cookies to encourage meeting attendance and was recently told "Don't quit your day job.... we need you to keep bringing cookies here)... seems to be working :-)
I've converted 2 of your recipes to gluten-free. Your strawberry lemonade bars worked beautifully and were absolutely delicious! 7 guests loved them, 2 asked for the recipe. Gluten-free free flour exchange 1 to 1, butter was decreased by 20%. My husband ( who is not gluten-free) said "You can make these again" . That is high praise from him!

I'm reading Slough Horses (Slow Horses on streaming) and some murder mysteries. I need these to get my mind off the horrors of what's going on in the country. I also sit in a hot tub, late most evenings even though it's still hot outside, to relax. Oh, I also took a six-week workshop to learn to play pickleball and now I understand the hype. Everyone needs hobbies.

Any chance you’ll be exploring some new muffin recipes any time in the future? I desperately need to add something new to my muffin line up! Grab and go muffins are always a favorite!
I'm reading "The Storm We Made" by Vanessa Chan, set in Malaysia during the Japanese occupation. This accurate historical fiction with dense, layered characters, comes to life through Chan's stellar storytelling. Now... I need to let some butter lose its chill so I can get these baked before the day finds its high heat.
