PS - Made the cookies - part of the batch last night & the rest today. We loved them but no matter what I did, they didn’t stay puffed up the way your photo looks & the way an ordinary chocolate chip cookie would. Tried refrigerating the batter, freezing it, & lowered the oven temp to 325. Even tested my baking soda, which was fresh & bubbled just fine. Thoughts?
You did everything right. What I did, was mislead you with a photo without a caption. The photo at the top of the page is what the cookies look like. The photo with the plump marshmallows is what the cookie looks like before going into the oven. My cookies look just like yours. Sort of messy and splayed, the marshmallows melting into caramelized pools. I am very sorry for any confusion, and hate the idea of you running around your kitchen trying all manner of improvements! I have added a caption to prevent further confusion!
I wasn’t led astray by your photos. Just thought your finished cookie looked plumper than mine came out. Anyway, you may hate the idea of me trying to plump up the finished cookie, but you shouldn’t give it a moments’ thought. I had a grand time experimenting & it distracted me from DC’s awful news (of which I hear all too much, living just a few miles from ground zero.) PS - Brought the cookies to friends who loved them too. And my friend Jill L is an online buddy of your brother’s. Ask him about their back-&-forth on the subject of these cookies. Hope it will make you smile.
While I was out of town for the 4th (and just getting caught up), I still and will always appreciate your thoughts on the day. Something is deeply wrong in this country right now and you’re right - we have much work to do. Thank you for your leadership and that of your brother as well snd thanks for the great cookie recipe.
