Mine are similar enough, though I cheat and use pumpkin pie spice instead of all of the individual spices. Thanks for the tip on letting the batter sit for 15 minutes before "decanting." I shall try that next time!
Oh yes, thank you. I'll be making this one this weekend. I love autumn and I'm not really a fan of summer. I now live in St Louis and 90+ degrees, with 90% humidity sucks. I also have the kind of skin that needs to stay out of the sun even after the invention of SPF 50. I'm looking forward to cool nights along with the trees turning color. I lived south of Houston for years and planted a maple tree once only to come into the yard one day in the fall and discover the leaves on the ground never having turned any color. I need autumn color. I also lived in TN and CT so autumn means apples, pumpkin, cool weather, sweaters and the trees being colorful.
My problem is in the middle of summer I can't imagine enjoying fall, but this past weekend it rained and rained and I wore my favorite red raincoat and thought, huh, maybe this fall thing will be okay.
Who am I kidding? I love fall. I went to school in New England for goodness' sake.
I should have chopped my apples more. I used Mequon. I think they will be better tomorrow - my batter was a bit dry - not sure why.... worried I would make them rubbery
These are the epitome of muffiny goodness. They have all the best flavors and textures of ideal food. Thank you for posting this. Next time I make these (which will be immediate upon finishing the last batch), I might try a little more streusel. One can never have enough streusel. Also the batter was a bit on the dry side and it required about 1/2 cup of milk to make it nice to decant.
What does wheat flour do v. Regular all purpose? Can you substitute ground up oatmeal for wheat flour. Item #4: whisk? Or sift? What does sifting do to results?
As a person who doesn't really care for summer (horrors!- just not a fan of hot and sticky) the Autumnal Equinox is a celebration day and these muffins definitely rise to the occasion. I truly appreciate a recipe that uses the WHOLE can of pumpkin. Thank you, and happy pumpkin spice everything (except SPAM!!!) to you too.
I'm so glad you noticed that about the can of pumpkin. As I was working on the recipe I made that one of my musts! Even tho I've a dog who would happily scarf any remaining pumpkin, I also knew that a whole can could work and make for a moist lil muffin

I've been planning to make these and just now see that there is no shortening of any kind in the batter - I don't bake all that much but is this true?
I amended the recipe, and it should say 1/2 cup oil. Although they’re actually quite good without. I tested them both ways!
