If you don’t mind, here are two questions, in the hope that they are not burdensome. What is the reason for using an egg and a yolk instead of (one or two) whole eggs? What adjustments would I need to make if I leave out the candy?

Crunchy outside with the effect of toffee brittle adding to the crunch, then the chewy inside with a hint of orange, the luxury of butter, the sweet of chocolate, the salty of a pistachio.
