If you left out the bananas, I would make this. I often say that if someone said they'd shoot me unless I ate a banana, I'd probably eat the banana. And if someone said they'd give me a million dollars if I ate a banana, I'd probably eat the banana. But I'm pretty sure nobody's going to either shoot me for not eating a banana or give me a million dollars for eating one, so I think I'm safe. So I made a yuzu pie for pi day (like key lime, but with yuzu juice). Because it's a fantastic pie, and also, pretty much the easiest pie to make.
I would never-ever force you (or my son, who also hates them) eat bananas. This pie would be perfectly delightful without them. Just call it a toffee pie. Mmmm.
I have some yuzu juice...now you have me thinking.
I use smitten kitchen's recipe and substitute the yuzu juice. No zest and I don't put whipped cream on top (even though I loved whipped cream elsewhere). And I'd be delighted to call it a toffee pie and do it without the bananas!
I am looking forward to making this pie eventually, even if it's not on pi day. Right now I've got Quick Cheeseburger Pie in the oven. It's from my kids' Alpha-Bakery cookbook. They are grown-ups now and I make the pie from memory (and I make it crustless)...so how it turns out is a bit of a surprise every time. But it always has a circumference of 3.1459!
