Peanut butter, oatmeal & dark chocolate? Sounds like health food to me. Can I use brown sugar in my kitchen from pre-COVID or must I buy new? I know the answer. But checking anyway.
I agree, it does sound like a health food! TBH, the brown sugar should be fine, albeit, it may have gotten hard. You can try to soften it in the microwave. Put brown sugar in a bowl olay a moist paper towel over it. Microwave for about 20 seconds and break it up with a fork.
I already added oat flour to my grocery list. I watched Line of Duty, all seasons, and I loved it. It gets better each season. I love to read so any suggestions would be great.
Really, really enjoyed Line of Duty, all 6 seasons. Highly recommend watching it. Just saw on IMDB that there might be a 3 episode season 7. Looking forward to it.

Two ingredient questions: why that particular brand of kosher salt, and why Skippy rather than fresh-ground peanut butter? Is it a matter of taste or of chemistry?
Morton and Diamond salt have different shapes and weight. Morton has finer crystals; Diamond's are coarser. The reason I tell you which I use, is because most importantly, they have different weights by volume. 1 1/4 teaspoons of Morton salt equals 2 teaspoons of Diamond. Freshly ground peanut butter will make a cookie too dry and crumbly. Jarred peanut butters like Jif or Skippy are the way to go.

It’s not a book you sit and read, but I do think it will be enhanced by eating these cookies. Also listening to Louise Penny again on Audible while I do Needlepoint. And reading, Lost and Found which is equally intense and poignant. Cookies will be a must.

So I used almond butter as my wife is allergic to peanuts and rolled oats instead of oat flour. They are divine!
