I love cookies where I can make the dough and refrigerate til ready to bake. Been a rough end of Jan to now and beyond. My 96-yr old Mom was in the hospital, now home but deteriorating. No time to bake now, but may try to sneak something she might like soon.

Would almond butter work in this recipe? Our favorite farmers market vendor sells almond butter from their own orchards and it is absurdly delicious.

I thought ordered "two" bananas, but got two bunches instead. So, a recipe for peanut butter banana cookies seemed plausible, then I remembered seeing this recipe (thank you Marissa for the download). There are seven nanners left, so I'm going to use two of the smaller ones in lieu of the butter (no butter, that's really painful) (and use the rest for banana carrot spice cake and muffins).

Mine turned out rather dry. My butter was probably warmer than 65F. Could that have been the problem?
