I love cookies where I can make the dough and refrigerate til ready to bake. Been a rough end of Jan to now and beyond. My 96-yr old Mom was in the hospital, now home but deteriorating. No time to bake now, but may try to sneak something she might like soon.

Your mom will love them--soft, delicate texture, pretty, and not too sweet💜

Almond butter seemed like a real possibility here.

Would almond butter work in this recipe? Our favorite farmers market vendor sells almond butter from their own orchards and it is absurdly delicious.

I'm now allergic to peanut butter. Where were you 10 years ago. LOL. They look delicious. I'm sure your readers will love them.

Bosco has a soulful gaze. He deserves an extra kiss or three, if he gives permission for such attentions.

I thought ordered "two" bananas, but got two bunches instead. So, a recipe for peanut butter banana cookies seemed plausible, then I remembered seeing this recipe (thank you Marissa for the download). There are seven nanners left, so I'm going to use two of the smaller ones in lieu of the butter (no butter, that's really painful) (and use the rest for banana carrot spice cake and muffins).

I always seem to do the same thing. I should know better after doing it once, and yet, nanners! Enjoy the cookies and the banana spice cake (yum!)

Mine turned out rather dry. My butter was probably warmer than 65F. Could that have been the problem?
