Frankly, the only thing keeping me sane is that my stomach ills have healed up, and, for the first time in 4 years, I'm able to consume dairy foods. Yummy butter! Yummy cheese! Oops-- I've gained 20 pounds.

I love reading about your cookies (and your puppy!) but then I always find an ingredient that doesn’t work for me - what about a vegan muffin? I love everything about the special one today except the eggs - could you help me?

Sure! Replace the 2 eggs with 2 flax eggs. To make one egg stir together 1 1/2 tablespoons flaxseed meal and 2 1/2 tablespoons room temp water. Let sit for 10 minutes or until it gets gel-like. You will need to make 2 of these, obviously!

Marissa, thank you for this recipe. I've been having lots of fun with your recipes using pumpkin. I grew Red Kuri squash this year, which I adore. They don't keep long, so I try to use them quickly. This one sounds like a winner! These recipes help me keep my attention off the extraneous news items. I converted the pumpkin spice snickerdoodles to a glutenfree, sugar free cookie. Big hit! Keep them coming, and thank you!

I've only made one batch so far. I want to try other flours, but I started with Bob's Red Mill flour that's rice based, not the garbanzo one. For sweetener, I used Monkfruit classic for the white sugar, and Monkfruit Brown, a sub for brown sugar. I did a one-for-one measure of the Monkfruit. I might try 1.25 next time. I didn't roll the cookies, I made balls, but just dipped the tops in the unsugared spice mix. These didn't spread out like the snickerdoodles did.

I'm definitely on a restrictive news diet. I read two newsletters, highlights from The Atlantic and the AP top news every morning. I set a timer so as not to exceed my time limit. And that's it. I feel much better reading poetry, history, non-fiction and cookbooks!

News restriction diet. Reading the NYT once a day online. Occasionally, watching Lawrence O'Donnell MSNBC. Reading more books. Just read four of Heather Webber's magical realism books in two weeks. Lots of food in there. Thank you for the muffin recipe!!!

Yes! One pup is older. The other came to us thru the breeder who thought he had a serious problem with his esophagus! But no!!!! Great joy is in our house! Congratulations!!!!!

Your posts bring me some peace, and more recipes to try. I am a member of the conspiracy of nappers. There is nothing like a nap with some tea and muffins on waking. Alas, I have no kitties to nap with any more. I think there needs to be a napping support group.

I'm still finishing eating my chanukah cutout cookies (in fact, I was eating one while reading your post). I find that if I nap with the cats in the afternoon, they're less likely to pester me to be fed for a solid hour and a half before their dinner time. A plus in every way.

I've found that napping with a cat is nirvana and yes, my cat is less likely to pester me for food if I take an afternoon nap with her. These muffins sound perfect for the can of pumpkin puree I have left over from the holidays.

Hooray! So glad you made them. Hazelnut flour, I'll admit, is also expensive if you buy it ready-made. Am very glad you used almond flour and enjoyed them. I buy big bags of almond flour at Costco because it's so reasonably priced. But I bake crazy amounts.
