Happy anniversary! Let us imagine that you’re making rock cakes for a raisin-averse friend. Would you swap in an equivalent amount (by weight or volume, you choose) of nuts or chocolate - and if chocolate, would you use chips or chunks? Asking for a friend...okay, I confess, I’m asking because I like chocolate and nuts waaaay more than raisins. There. My secret is out.

I would embrace my love of chocolate and nuts and use chips or chunks...whatever I had on hand. I would pour in 3/4 cup of chips or so...and then decide I need more. And add more. Add nuts as you wish. I would root for more chocolate v nuts. But you might want to do them even-Steven, as my fourth grade teacher used to say. About a cup of add-ins, here or there.

My husband LOVES Russian Rock cookies. They are crammed with raisins, chopped dates and walnuts. Years ago we had a terrific downtown department store that had a bakery counter and they sold these cookies during the Christmas holidays. This beautiful store closed at least 25 years ago, but a couple of years ago our local paper published the recipe in an article about goodies we no longer can find. And hubs is a raisin lover… he asks for raisins in everything I bake: chocolate chip cookies, brownies, even peanut butter cookies! The Russian Rocks I make look like the rock cakes in your picture. He loves them!

Brought back some memories for me … a dear friend used to make rock cakes. She passed a few years ago and I haven’t had one since. I think I’m going to give it a try myself in Helen’s memory. Thanks everso!😸❣️

They look yummy! They structure reminds me of drop biscuits. I usually roll, but I’ve shown many people drop biscuits as a perfectly decent work around

No one should ever have to be subjected to raisins. I like raisins. But I would never choose a raisin over a chocolate chip. No.

Calvin is a smart cat! Is a nippy 52 degrees, a Sunday made for napping, which I “accidentally” did before brief walk outside. Thanks to you, I now have something to make to go with my soup for dinner! Much appreciated!!

Happy Anniversary, your wedding cake sounded ummm good. I'm definitely a cake lover. The rock cakes look like they'd be perfect with tea ( I'm trying to drink green tea for health reasons). Does Calvin help? I have a nightly calico dinner helper named Cooky.
