JD Vance wouldn't know what to do with a cast iron skillet if you hit him in the head with it. Not that I'm suggesting anything. Looking forward to trying that lemon shortbread!

My grandmother typed out her recipes on recipe cards and gave me a box of them. Included are many Depression and WWII-era recipes that minimize eggs. I posted her eggless Applesauce Cake recipe on Bluesky, and it was a hit (it rises with baking soda). Marissa, if you'd like me to email it to you, respond to this post.

I have an eggless cake from my grandmother too - it creates a cake top and a caramel sauce underneath.

Are you on Bluesky? If so, I'm @arvafan55.bsky.social (there are two recipes--a one-egg "Apple Knobble Cake" and the aforementioned Applesauce Cake. If not, email me at Lhpeebles (at) aol.com.

many thanks for the uplifting commentary. between the lesson on speaking like jon snow, the yummy recipe with the sunburst of lemon and the photos of how VT greets a traitor all worked together to put me on a better path for today. Plus - of course - the kitty lounging in the sun was the perfect ending.

I will make the shortbread this week

Speaking of eggs, I have found Bob’s Red Mill egg replacer works very well in baked goods!

( currently, $4.99 for 12 ounces which yields the equivalent of 34 eggs)
