JD Vance wouldn't know what to do with a cast iron skillet if you hit him in the head with it. Not that I'm suggesting anything. Looking forward to trying that lemon shortbread!
My grandmother typed out her recipes on recipe cards and gave me a box of them. Included are many Depression and WWII-era recipes that minimize eggs. I posted her eggless Applesauce Cake recipe on Bluesky, and it was a hit (it rises with baking soda). Marissa, if you'd like me to email it to you, respond to this post.
Are you on Bluesky? If so, I'm @arvafan55.bsky.social (there are two recipes--a one-egg "Apple Knobble Cake" and the aforementioned Applesauce Cake. If not, email me at Lhpeebles (at) aol.com.
I am. I’ll have to look see what I am 😆. Actually I’ll email you. I’m suryasmiles @ iCloud dot com. I’m vegan here (he’s not) but eggless is good too just because. 🥰
many thanks for the uplifting commentary. between the lesson on speaking like jon snow, the yummy recipe with the sunburst of lemon and the photos of how VT greets a traitor all worked together to put me on a better path for today. Plus - of course - the kitty lounging in the sun was the perfect ending.
Love shortbread, love lemon, love the iron skillet sign, love your commentary. Thank you. I needed all of this in order to stop the tears this morning.

I have an eggless cake from my grandmother too - it creates a cake top and a caramel sauce underneath.
Oooh, I’d love a copy!

I’m sorry that you had tears this AM, but I can’t say I don’t understand. Take care. xo
Entertainment and a snack. My day has been made.
It’s the little things that are necessary to balance the awful, eh?
Absolutely! And my Lemon Shortbread is just about to come from the oven. Will be ideal with afternoon tea.
I will make the shortbread this week
Speaking of eggs, I have found Bob’s Red Mill egg replacer works very well in baked goods!
( currently, $4.99 for 12 ounces which yields the equivalent of 34 eggs)
Love reading your posts! Thank you for allowing fixed income readers read for free. Appreciate your humor and insights! Thank you, again.
Perfect shortbread! Thanks.
You are the best and brightening us all up, Marissa!
Another New Hampshire resident here… I thought this post was such a hoot that I read it out loud to my S.O.
I have to add, that Marissa's sarcasm meter was off the charts today! A 20 out of her usual 5to10. Well done! Thoroughly enjoyed the read.
Just what I was looking for. TY
You are very entertaining! Now how do I find a chewy oatmeal cookie recipe, please and thank you, thank you, thank you!😊
