It really was fun, tho disrupted before you made the galette by arrival of out of town kids. But they watched over lunch, I just didn’t catch much so will be making use of your recorded version. Great vid, lots of details! For leftover dough - I roll out kinda rectangular-ish, spread whole thing with butter, sprinkle with sugar & cinnamon, roll up tightly like a jellyroll & slice about 1/2" thick. Bake in a glass pieplate for 10ish? mins at 375 until golden. I call them "Pinwheels".
You must be as old too, my grandmother did it. I’ve done it with the pre-made store-bought rolls. I lightly flour it & roll them out thinner, then they’re not bad.
Interesting idea, tho I’ve not used bought dough. Had I grandchildren nearby, would do it! Yes, am “older” at 78. Grew up in a pie family whose joke was “if you can’t make a pie, you can’t be in the family.” Nothing fancy ever.

My choice with dough as well, have done it for years and even considered making the dough just for those luscious little pinwheels!
