Yum! I'll be trying this! Re resolutions: the only one I have ever really kept was one I made about 25 years ago, to make my bed every morning. It really feels better to get into a bed at night when the sheets are nice and smooth, with minimal cat hair!
I love that resolution, but my cats always seem to hop onto my bed before it's made....which means, of course--it's a rule--that I can't move the cat to make the bed....
I have not tried it yet so have nothing to contribute other than my opinion. Which is that it sounds delicious and meets my requirements for an actual snack. Thank you.
Ooh, this sounds delish! The year that I resolved to be creative for a minimum of 30 minutes a day, five days a week, and stuck to it (!) was one of my best years. Sadly, I've been struggling to do it again. Fingers crossed for this year.

This is beyond delicious. I had some for breakfast this morning. It’s ultra moist, filled with flavor, oh so good. Easy to make, too. I got a small amount of oat flour in the bulk foods section, since I don’t normally use it. I assumed the oil was to grease the pan and not be part of the batter. I’m making it again in a few weeks for a group that will be meeting at our house. Thanks so much for this recipe. It’s wonderful!
Think how confused **I** am that I didn't put it in the directions. I am so sorry. It goes to show that it wasn't that important if Vicki managed to make it without the oil, but it should be added to the mixture. And I will amend the recipe. My apologies. I am sorry for any confusion.

Hubby is in that ??? Class. Class of 1960, but he was there only his senior year. With his dad in the Air Force, he lived lots of places. Summit is really lovely , and we’ve attended several reunions there. It’s fun to have that connection with you. And of course the cookies. 😊🍪
Is there a grain-free substitute you like? I am a big fan of coconut, cassava and almond flours as alternatives, but have NOT tried it with this recipe. I will try this week if you'd like...and if any of the substitutes work for you. LMK.

And it taste really good without the oil. So either way, it’s good! What a delightful recipe.

I do use almond and cassava, don’t care for coconut. That would be awesome if you tried! Happy New Year
