I made these today for my Mah Jongg group. I followed the recipe exactly. They came out beautifully...everyone loved them, and one lady commented that they were perfectly baked. I was careful with the timing and they only had a tinge of browning when I took them out of the oven. They looked a little under-done but firmed up just fine. People were delighted with the lemon--it’s unexpected.
I think I'll have to substitute lemon zest for the lemon extract. Or lime zest. And almonds for the macadamia nuts (my mother has a macadamia tree but I only have an almond :). YUM!
But Marissa, I totally think you should liken cookies to poetry frequently. It's a good thing. I was pleased as punch to see the word "jocund" in a post about cookies. Also with you about white chocolate, but still intrigued with this recipe.
Cookies and poetry go together so well! Don't hesitate to do this again soon, as the spirit moves you! I bet your pup loves hearing you recite poetry as you are baking!!

My heart goes out to you. I am so sorry about your mother. I planned to plant some peonies today in honor of my mother. And I shall bring some daffodils in from my garden in honor of yours. We are strangers, but we are here if you want to share stories of your mom. It can help.
Fabulous recipe! Yum! And I'm with you all the way on your feelings about white chocolate, past and present. Perhaps we should simply call it something besides chocolate, which sets up false expectations, and then we could skip the fussy/snobby/sneery bit and move directly to loving the sweet, creaminess of it.

'MIlky moondrops' is quite good but I always think they're White Bliss. I'm very suspicious of people who don't like 'white chocolate' :)
