I skipped icing (lazy), doubled the strawberry powder in the dough instead. Perfect balance of sweetness and acidity. Yumm!

Fantastic recipe, and you're right about the greatness of freeze-dried fruit, especially when it's powdered. I keep all kinds in the freezer and add powdered sour cherries to sour cherry pie, powdered peaches to peach pie, etc. It strengthens the flavor and helps keep the filling from getting gloppy.
