LOVE love love your work Marissa, but as someone who can't eat dairy, wheat or sugar I have a very hard time reading your posts. I used to support myself as a cook, so that part intrigues and gets me excited about creative cooking, but then I remember I can't eat 90% of what you make. Sigh....
It's ok. I just didn't want you to think I didn't enjoy and appreciate what you're doing with "The Secret Life of Cookies." I've also loved the times you have joined E. Jean's ZOOM calls and shared your drink concoctions and thoughts about life in general :-)
At this point, I'm used to my restrictive diet. And yes, all sugars, though I can and do use Xylitol in my cooking. Oddly, one of the things I crave is lemon shortbread bars. I can eat almond flour, and I think I could use coconut oil and Xyitol along with fresh lemon zest and a touch of vanilla to make a pretty tasty shortbread. What do you think?
P.S. Keep the wonderful recipes and reflections coming. I am enjoying vicariously :-)
I remember these from when I lived in England as a child. And the hint of lemon in the icing is perfectly on point! Thank you for a excuse to bake my way down memory lane 🇬🇧

The flower decorations are wonderful! The name reminds me of fairy bread which is perhaps unknown outside Australia.....
