Here in south central Pennsylvania, in the Appalachian mountains, we make a groundhog cookies, which is a spiced molasses, and use a groundhog shaped cookie cutter. The official state page shares the recipe: https://www.visitpa.com/article/official-groundhog-cookie-recipe

Groundhog cookies cutters are found at the Punxatawny Souvenir Shop in PA as well as on Amazon and through other makers of custom cookie cutters. But, thanks to your post, I'll try the pancake muffins today! Here's to Spring!

As soon as I finish off my zucchini muffins I'm making these. I'm 70 years old and grew up in the midwest eating big food corporation (BFC) maple syrup. Later on, I lived in Connecticut for more than 25 years and loved seeing all the maple sap being harvested from the trees. Many people had a couple of trees on their property set up for harvesting and there was a mom and pop operation nearby that made maple syrup. You could stop and they'd let you see their production and buy some syrup. From then on, I can only eat real maple syrup, which is thinner than the BFC stuff, but so much better. Luckily, I went back to big city living so I can easily find the real thing.
