I use good multigrain bread slices, whole grain mustard, white cheddar or Swiss or Gouda, sliced olives (any kind of green or black). Grill in olive oil. Yum, yum
So glad Bosco is OK. Our dog ran into our car one night while doing zoomies in the yard and split open her shoulder. She needed lots of stitches and a course of antibiotics. Poor baby was quite lame for a while.
So sorry about Bosco, and glad it wasn't worse. My grilled cheese of the moment comes from my father's stint as a drugstore soda clerk in his youth (and that's how OLD I really am!). I've slightly modified it. A little mayo on the insides of 2 slices of Ezekiel sprouted grain bread, and a little mustard -- at present, it's Dijon. Then good old cheddar. If I am truly in rebel mode, it's lightly buttering both outsides. Then grill, brown, flip, press top down, remove before I burn it. And ketchup? Icck!!!
Also--or maybe most importantly--I'm glad Bosco is okay and after that day if anybody had an excuse to make a grilled cheese sandwich using mayo I suppose it's you.

I use butter on the outside and often slide a slice of ripe tomato OR dill pickle in between the slices of cheese. Or Boars Head black forest ham. In that case, mustard too. Never thought of ketchup.
In a pinch, cold cereal and milk is a good soothing late night meal too. Like your plane gets in late and all the airport restaurants were already closed and you are starving….

Mayo pan-side bread, 2 thin slices cheese on bread, smear but not to edges, blackberry jam, top w/2 more thin slices cheese and the bread. the rest is as usual, brown, flip, brown, let sit few minutes, cut in half or not; EAT
I've never tried the ketchup.. I always have tomato soup or bean with bacon soup to dip my sandwich in...will try the mayo trick. sounds good. So glad to hear your furbaby is doing ok.
I learned to use Mayo on the outside of the bread several yrs ago, and there is no better way to make a magnificent toasted outer side for your grilled cheese sandwich. When you need a pick me up, grilled cheese usually does the trick, but I dip my sandwich edges, when ready to eat, in thousand island dressing from Whole Foods. THAT step takes me over the top. Try it. I promise it is fabulous.
Just offering an opportunity to broaden your tastebud horizons. It's still your choice, but yes, as mom used to say, Texas Sauce (Heinz) goes well on most things. But, I expect if you try it, and I do mean that brand from Whole Foods, which I think is 365 Organic, you'll find it very tasty. If that happens, feel free to reach out to me and let me know.
