Walnuts would be a great sub. Then do 2 teaspoons of vanilla for fun. And feel free to make this as muffins too. Or cut the cake in quarters and freeze them, well-wrapped to avoid freezer burn! Hope you are doing well! xo

It engages all ages, tells only the truth, is serious and snarky all at once. Perfection. Like this cake sounds, which I will bake late this afternoon because I think I want to eat it warm.

There are those of us who are saying we are better than this and feel we should be working together for a better union. Hey there! While this post isn't directly related to low-GI diets, that blueberry coconut cake recipe caught my eye. Blueberries are actually a great low-GI fruit option! If you're looking to make this recipe a bit more blood sugar-friendly, you could try swapping some of the all-purpose flour for almond flour or coconut flour. And maybe use a natural sweetener like stevia instead of sugar. Just a thought for those watching their glycemic index! Happy baking!
