Just so you're aware, the final product will be different than what is intended if you leave out all the sugar. It should still have a tender crumb, because it's basically a biscuit dough, but you might want to up the cinnamon to make up for the lack of sugar--otherwise the spices might be v. strong.
I would love to see cookies that use olive oil instead of butter. I've been almost all baking with olive oil these days, and have become a complete convert. I have very few cookie recipes that use it, and the ones I have are delicious (i.e. Leah Koenig's most recent recipe).

After many years of buying costumes (I don't sew), walking my daughter around for Halloween and handing out candy once she was too old to go with her mom, I'm enjoying not messing with it directly. I'm retired and live in a great apartment complex within a huge area of single family homes so the kids don't come to the apartments, they walk the single family neighborhoods. In a galaxy far, far away when I grew up, my brothers and I always hit the apartments since you could get more candy with less walking, and didn't have to talk to the neighbors who knew us.
2. I love Halloween. Something so deliciously out of the ordinary. Not just costumes, but being out at night, being allowed to “demand” treats.
My g’son likes to coordinate costumes (as his mother did when she was little). I made his baby sister a slice of pizza costume to go with his ninja turtle get up
But I am also expected to be a turtle. We’ll see if I’m up to snuff! Last year I was Poison Ivy to his Batman, and year before last Glinda of Oz.
Love the cookie recipe! But I adore all things Fall and Halloween! I normally dress up, sit on my porch and pass out candy to the neighborhood kids with delight! But this year I’ll be dressing up and trick or treating with my grandkids!!! What could possibly be more fun?!
My 4 heavy-duty chicago baking pans are almost always lined with silpats or parchment paper, so the surface stays relatively pristine. I use a couple of ancient, darkened cookie sheets for toasting almonds and things like that.
I have my "favorite" baking sheet. It's all dark with stains. Perfect for roasting veggies and baking meatloaf, etc. My other cookie sheets look almost brand new. Those are my cookie pans. They look so good cause I haven't been baking g, but with your yummy recipes I plan to be!
