I am so intrigued by what today’s emergency session of the House January 6th Commission might turn up that I’m already sitting on my couch in front of the TV.
When I saw tape of Cassidy Hutchinson’s deposition last week, I was drawn in by her enigmatic semi-smirk as she listed all the people who grovelled for pardons after January 6. I should know better by now then to get my hopes up that major beans will be spilled. But but but the committee called it as an emergency!
Either way, I knew a simple snacking cake was in order. I had some boxed cake mix in my cupboard from experiments I’d done last month, and with a few simple tweaks, turned out a brownie-like cake…or is it a cake-like brownie?…that delivers on chocolate. And chocolate is what I needed. You?
You can have this in the oven in 5 minutes…
Emergency Cakey Brownie Cake
What You’ll Need:
1 box chocolate cake mix (I used Duncan Hines Devil’s Food)
2 eggs
1/2 cup neutral oil, like Canola or grapeseed
1/4 cup cocoa powder
1/3 cup plain or vanilla yogurt (or sour cream)
12 ounces semisweet chocolate chips (although a mix of milk and semi would be pleasant, as well)
What You’ll Do:
Preheat the oven to 350 degrees F. Grease a 13 x 9-inch pan.
In a large bowl, stir together all the above ingredients, from cake mix to chocolate chips. The mixture may be a tad stiff. Make sure it’s well-blended.
Pour the batter into the prepared baking dish and spread it evenly to the edges of the pan.
Bake for 25 to 30 minutes until the top is crackly and a toothpick comes out clean.
Let cool for at least 10 minutes before you jam it in your gob. Eat with ice cream, and, unlike most of the members of Trump’s staff, guilt-free!
What are your hopes for the hearings? Or if you’re reading this later, did it feel worth having an emergency meeting over?
The only thing that would have made The Cassidy Hutchinson HEARING better would have been you and I watching in my kitchen and letting me lick the left-over batter on the spatula, Marissa!
I think I could have eaten the mix straight from the box while watching the hearing and not notice what was going in my mouth (although your version would be so much better).
