I’m actually going to buy this book for a nephew and his wife who are vegan! They enjoy cooking and baking, and I think they’ll enjoy it. Thank you! I’ll try the recipe here as well. I dabble in vegetarian, so why not vegan, right?? 😃

I'm not a vegetarian or a vegan, but I did save the PDF to give the financiers recipe a try since I love financiers. It's good to be open-minded. I'll try a recipe for roasted chickpeas since I do like them. Some Persian cookies use chickpea flour. They tend to be a bit dry but are very good with tea.

Thanks for the chickpea side-rec. I knew there had to be more than hummus to use up those beans, peas, whatever. I swear they multiply overnight!

Not sure if it’s available in your area, but a can of One Pie pumpkin has never done me wrong. Gold standard in New England.
